this is us

Hi. We are Lena and Dominik,

A young pastry chef couple from the Black Forest. We both grew up in restaurants. Lena comes from the family-run Boutique Hotel Dorer in Schönwald and, together with Dominik, joined Dominik's family business, LÖWEN, in 2021.

ABOUT Lena

I'm a passionate chocolate lover and, in addition to hand-scooped chocolate bars, Easter bunnies, and pralines, my favorite thing to make is croissants. I enjoy the varied hustle and bustle of the bakery most. Dominik inspired me to pursue this career and awakened my passion for being a pastry chef. In 2018, we moved together to our favorite city, Cologne, where we worked at the renowned pastry chef Matthias Ludwig's Törtchen Törtchen. As a bridge between pastry and coffee, my duties in addition to the bakery included selling over the counter and working at the coffee machine, which sparked a small passion for being a barista and good coffee. (I need a cup of coffee first thing in the morning.)

With the pastry chef master in our pocket, we returned in 2021 and were able to start our planned renovation earlier during, or thanks to, Corona. This is how the modern entrance area was created, which fulfilled our vision with the cozy lounge corner and the view of our cakes and tarts counter.

Since 2023, we have become parents of a little daughter who not only brings a smile to our faces every day, but also makes our lives a lot sweeter.

About Dominik

As a trained chef and pastry chef, it quickly became clear that I wanted to continue my parents' business. Only one thing was important: it needed a breath of fresh air, and we made that clear with our French patisserie and weekend breakfast. I personally don't want to give up on our

Eggs Benedict with roasted Black Forest bacon. When the going gets tough, I'll be in the kitchen with my dad, making lunch and a traditional Black Forest snack.
In the bakery, I'm proud of our growing team. Our journeyman Janine joined us in March 2023 and has been actively supporting us in the bakery ever since. In September 2023, we welcomed our first apprentice. With Elina, our team of four is complete, and we're thrilled to be able to continually produce new creations, tarts, and cakes.

If you'd like to get an exclusive insight into our patisserie, our courses are the perfect choice. I'm passionate about these, too, and look forward to passing on my acquired expertise.

Participating in the popular TV show "Das Große Backen - die Profis" was a wonderful experience. Right from the very first task, we were able to demonstrate our skills against five other professional teams. Our "Bananarama" creation and the Black Forest-themed sweet train impressed the judges so much that we took first place overall, even scoring 30 out of 30 possible points for our cake.
